How to get through Lockdown v3.0: cava

Today we’re cracking open a cava. Yes, that sparkling that people think is cheap and nasty. Really?

So, what is it?

Cava is a sparkling wine principally from Catalunya in northeastern Spain. 

 

It can be made from various grapes but traditionally macabeu, parellada and the pleasingly written xarel·lo.  Cava is made in the traditional method, the same way as Champagne.

We've tasted Cordoníu 1872, 2018 vintage.

  • In the glass: light gold colour, no significant legs, a gentle, persistent effervescence

  • On the nose: yellow apple

  • In the mouth: dry, high acidity, yellow apple, lime, quince, chamomile, almond

  • Finish: short with a little lime coming out

  • Conclusion: a good wine to drink now but with potential for future ageing

 

What should I eat with it?

Classically, any type of Spanish tapas or pinchos.  It also works well as a wine to cut through fattier foods.  Try it as a replacement for non-vintage Champagne.
