And, because the question comes up from time to time. . . the name Last But One comes from what you say in a Spanish bar when you’re getting ‘one for the road’. You never order a ‘last’ drink, merely a ‘last but one’. It’s a homage to all the amazing nights we’ve spent tucked away in bars in cities around Spain. ¡Salud!
