Cascara Manhattan cocktail
OK, so, this post probably requires a quick warning(!). Some people might find this a heresy; this is not a classic Manhattan recipe.
Discarded sweet cascara vermouth is a strongly flavoured vermouth which draws its riot of surprising flavours from the cascara - dried husk - from a coffee cherry.
Ingredients
60 ml rye
30 ml Discarded sweet cascara vermouth
2 dashes Angostura bitters
Method
Chill a coupe or Nick and Nora glass.
Place all ingredients into a mixing glass and stir over ice for 25 seconds. Double strain into the chilled glass.
As you sip it, wonder whether you will ever want to drink an espresso martini again.
